I like the idea of identifying squares on the line in terms of distance from the middle square, read left to right.
So a "bunched line" centered on the pitch is a "101" while a spread line is a "202" and a bunched 5-man stack is a 21012.
We could expand that to flankers and wings, so if the flanker is forward, it's a "56" and if the wing is forward it's a "65".
Not sure about that one. But I like it on the LOS....

"The Flak"
This one is very situational, I use it for setting up when there is only one turn left against a team that can score a 1TTD by throw team mate. It is not fool proof but at the very least they will have to make dodges; and should the scatter go towards my end zone, they will land in one or two tackle zones (or on a player).

Edit: oups, a erased my earlier post when hopping back to retrieve the code for this set up... Well here's what i wanted to say...
Pug. Concerning the Double Banana (love the name BTW) you missed a little on the 3D. Suicidal as it might be I position my flankers one square from the sidelines. The point of this setup is to paint the pitch with TZs making it harder for fast agility teams (that lack frenzy) to rush up for the 2 turn hand off-pass TD. Works well against the infamous Slann Two Turner too.
Love the 3D BTW. Keep it up! (is it sketch-up you're using?)

The Pincer
I use this when playing as Skaven to protect gutterrunners ( they're the players on the 4th row) and free up lanes of attack for immediate counterattacks.
I call it the pincer because the cluster of 3 players on either flank is composed of playmakers (atleast one blitzer and gutter runner) and the play usually develops such that both clusters either rush players into the offence's backfield or converge to flank attack a cage at midfield.

Your "pincer" is an arrowhead with inverted wings. I like "pincer" as a description, but frankly a lot of defenses provide that characteristic. Maybe that should be the name for the inverted wings, making the "arrowhead" with the pincer-wings the "crossbow." like?
