varnish

bit of a stupid question probably (yes I know, should be posted at newbies section), but this is it:
can you just spray a model mat varnish as protection and if you do either or both of them, will the looks change much?

I use a ton of shiny varnish and a spattering of matte, and you dont see the shine at all.

I use an artists matt varnish - winsor & newton acrylic matt - and it dries totally matt and from what I can tell is as hard wearing as GW gloss.
I then gloss over gems etc. after that.
