OK - if I'm going to be any good at this, am I REALLY going to have to bother with all the statistics and stuff? Can't I just guess? Maybe we should make it a rule that anyone that works out statistics or probabilities in order to play better should never be allowed to play again. BB or indeed any other game. Fair? (I can give you a hand with wording if you need help writing it for the LRB)

Statistics are for horse races, not dice games.

The only statistics and probabilities you really need to know are the easy, almost common sense ones. Just learn to play, and you'll get better. Just like everything else.
I can put it best by saying that this is a thinking game so everyone is going to have a different way of doing things. The satisticians like to think that there is only one way to look at it but that's pretty common of all scientists. lol

Yeah take my current game.
I'm failing 75% of my rolls that have a 75% chance of success ... don't worry about the odds ... learn some basics ... 3 dice blocks are normally pretty safe. A 3+ roll with a reroll is better than a 2+ without one.
Those basics are all you need ... Lady Luck will deal the rest.

It also depends which reality you live in. In the above case the opposite is true for me. Rolls of 3+ with a reroll will fail always, unless it's trivial. Rolls of 2+ will always succeed, unless it's trivial.
My reality is very odd... I keep seeing purple elephants...

You can become very good without working out odds, especially with experience as you'll just know what works. But you won't become the best player in the world.

Might be. We already rule at Starcraft and Counterstrike (seriously), so why not Blood Bowl. Just because of the sheer mass of players though, i wouldn't be surprised if most of the best players were British.
