Quick question on Blood Bowl protocol:

Is it considered bad form to pick matches against certain races over others, or is this an accepted part of play?

Say, if you're coaching an agility or stunty team and would prefer not to play against teams which are likely to leave most of your players dead or injured.

Cherrypicking, i.e. choosing (or avoiding) opponents increases a lot your chance of winning, because some teams are very strong/very weak against others (classical example, Dwarfs vs Amazons).
On FUMBBL, in Ranked division, matches are arranged by allowed cherrypicking, so I don't think it's a bad form, but an uncompetitive one for sure.

Thanks, but is this seen as a good or a bad thing?

Say, if you were playing an Amazon team then are people generally willing to accept that you probably won't want to play against Dwarves? Or will this have your opponents sucking their teeth and muttering "really not the done thing, old boy"?

In Ranked many Amazon teams don't play vs Dwarfs, so yes, people will generally accept it, don't worry.
There is a gamefinder that doesn't even require to arrange a match via PM, but by ticking boxes (green you accept the offer, red you decline it).

Depends a lot on the kind of league you're in.
Many smaller Leagues run round robin seasons.
But your league allows game dodging, your opponents should blame the league structure rather than blame you.
