The point of the bobs is simply to show the blocking mechanic. With mirror humans and no assists you can't get more than a 1d block.

You will if you include catchers, sindex. And you'll want them for the dodge mechanic.

Orcs vs Humans (as others have already said)

But, don't bust a gut getting equal TVs..

Maybe 2 BOs, 2 Blitzers 1 thrower

vs

2 Blitz, 2 catch, 1 thrower

11 players, 2-3 rerolls.

Havn;t even thought about how that compares to equal TVs, but should be enough for an experienced coach to take either side and LOSE!!!!

That's the main thing I think - show as much as possible, but make sure you take a kicking..

I think the main thing Im trying to say is try and keep both teams kinda equal, without going tournament lists.
Then whatever list your opponent chooses, he should have a good chance.
But add to this with stupid things like dodging to Blitz with the Black Orcs etc
Any coach that's played more than a few games should know what a player should not do, and that's exactly what you should.
(but not excessively so.... the trick is so they think they earned that win and are a natural)

We like a team of Amazon Linewomen vs. a team of Norse Linemen.

All 6337 and one team is all Block, one team is all Dodge. You get to show both main skills plus positioning and assists while remembering only one stat line.

Spend extra time on assists.

I do like the idea of using Amazons and Norse but I feel like you would miss out on different strength blocks and different movements.

Extra ST makes the assists too easy and I find teaching assists one of the hardest parts of teaching BB. Using all 3ST players really gives the learner a chance to get the idea of assists down early.

Another bonus of using Norse v Amazons is that when they do get knocked down, they go squish easily... and everyone loves to see players being carted off the pitch! Get the bloodthirsty new players in :P
