While the old CR ruleset has a stipulation that a player needed to be able to play in a game to recieve the MVP award, this does not seem to be the case in the new rules.
So can a player that missed the game due to a prior injury be selected for, and then given, MVP?

As I read the DZ1 rules, yes, you can.
The player has to be from your team.
You could argue that it is meant "the team that played the match" but that would exclude any player who never left the dugout.
Even Errata and FAQ have nothing about that.
