Some more suggestions for the OP.

People mentioned finding a volunteer to be odd-man-out. In our area, this volunteer doesn't pay entry fee. But they only have 50% chance of getting to play. They usually end up helping the TO with herding cats also.

I highly recommend this. At least, when you are new to being a TO. In the future when you have your routine set, it is easier for the TO to be the odd-man. We generally do one day/four matches. If the TO is playing then things start to run real late.

I think most TOs do this.
what we tried to do if even, is to do this way:
- having several spare players. (ideally 3, for a one-dayer tourney)
- each of this 3 players is off one round


else, what happens most of the time, is the following, one or several coachs of our local league are not allowed (by wife) to be there all day , and came for one game or 2 (most of the time, with a funny roster, like gobelins, in order)

so "à la carte", but every heres came for just playing games and meet coachs, to the more participants, the better :)
